Quality of food prepared in the markets of the GAD Municipality of Ambato. Strengthening of preventive measures and basic principles of hygiene to ensure food safety.

Abstract

The strengthening of preventive measures and basic hygiene principles to guarantee the safety and quality of food prepared in the markets of the GAD municipality of Ambato is given due to little interest in training, added to minimal knowledge on food safety, food protection, regulations that govern within the health protocols, and are framed in the health emergency that Ecuador and the world are experiencing due to COVID-19. The objective of this work has been to develop a training plan aimed at hygiene control and food handling, to develop a linking project that allows improving hygienic-sanitary conditions.
