Antioxidant and nutritional properties of the fruit and leaves of the averrhoa carambola tree.
Abstract
The objective of this work is to determine the nutritional and antioxidant properties of the fruit and leaf of the averrhoa carambola tree cultivated in zone 4, Ecuador, for which biometric, chemical and biochemical methods were used to determine the phenotypic characteristics of the fruit and to determine the capacity and antioxidant compounds in the fruit and leaves of the tree. The nutritional property of the fruit was evidenced by the high content of carbohydrates and vitamin C; therefore, products derived from averrhoa carambola can constitute a good nutritional and medicinal component in the human population.
