Abstract

This research focuses on administration and marketing, especially market analysis. The restaurant field was chosen, since it proposes helping the population affected by diabetes and high blood pressure in Nuevo Laredo, Tamaulipas. The main objective is to highlight the lack of restaurants to choose healthy dishes for diners and comply with their dietary regimen. With a quantitative approach, results from surveys conducted with citizens over 18 years of age, as well as nutritionists, are interpreted and analyzed. According to the analysis carried out, respondents expressed excellent opinions about the installation of a restaurant with a nutritional care menu; It is a new segment, which proposes to distinguish itself from other foods such as seafood, fast foods, barbecues, among others.
