Analysis of the sensory experience in the tasting of an asian-ecuadorian fusion food menu: case study in Ambato, Ecuador.
Abstract
Gastronomy, essential for cultural and economic development, has evolved from a basic need to an international delight. Ecuador, despite its size, offers a culinary variety thanks to its regional diversity and the influence of different traditions and trends, including fusion food, which combines cultures. This research focuses on Ambato and aims to understand the habits, tastes and preferences of people towards Asian-Ecuadorian fusion food in order to design a gastronomic offer. A mixed research was used, with a predominantly qualitative and experimental design of action research. The scope was applied exploratory, focused on a sensory experience of a five-course menu. Expert gastronomes participated in the tasting and validation of instruments.
