Abstract

The study explores the inclusion of local agricultural products from Píllaro in modern gastronomy, combining advanced methods and solid theoretical bases. Investigating the viability and effects of these ingredients in today's cuisine, it highlights the relevance of authenticity and sustainability in culinary creation. Collaboration between farmers and chefs is essential to integrate tradition and innovation. Beyond improving the gastronomic offer, the study seeks to promote local cultural identity and strengthen the economy of Píllaro. The results provide key information for strategies to promote sustainability and economic development through modern culinary practices in local agriculture
