Analysis of the traditional gastronomy of Ambato and its contribution to the promotion of local tourism

Abstract

Ambato is distinguished by a rich gastronomic variety that plays a crucial role in the promotion of local tourism. This research focuses on the characterization of Ambato's gastronomy, recognizing its relevance as a cultural and traditional expression that attracts visitors. The study, oriented towards demand, adopts a quantitative-qualitative approach with research techniques applied through a cross-sectional methodology. Through surveys of 196 participants with a margin of error of 10% and a confidence level of 95%, it reveals the current situation of local gastronomy, typical dishes, their origins and ingredients. In addition, actions are proposed to strengthen typical gastronomy, seeking to enhance the competitiveness of Ambato and stimulate local tourism
