Optimization of child nutrition in Tungurahua through egg-enriched menus for children under five years of age
Abstract
Consuming one egg a day can significantly contribute to addressing malnutrition in children, reducing nutrient deficiencies that affect growth, motor and cognitive development, in addition to weakening immunity and even putting their lives at risk. This research focuses on taking advantage of the nutritional benefits of eggs by creating menus aimed at improving the nutrition and development of children under five years of age in Tungurahua. The methodology used is descriptive and mixed paradigm, including surveys, interviews, and sensory evaluations. The results were compared with previous studies, resulting in thirty daily menus that cover the nutritional needs of children for a month, suitable for cyclical use
