Adaptation of food security in the face of the El Niño phenomenon in Ecuador during 2023

Abstract

It is essential to emphasize the promotion of the intake of seasonal foods of high nutritional value and the application of food conservation methods to mitigate the effects of the El Niño Southern Oscillation Phenomenon (ENSO) and the current food crisis. The results of a survey revealed that rice as the main food consumed, followed by beans, milk, and bread, highlight the fundamental role in the diet of the population studied. The survey also noted a general increase in the prices of these products, impacting personal finances. This has led to changes in eating habits. It was evident that a significant part of the population still does not adopt sustainable practices in their daily routine
